HEALTHY SUPERBOWL RECIPES

This one comes from Blaine the trainer at Southwest. (Who also was a former participant of Shape Up Omaha and has lost over 90 pounds since last January!)

Healthy 8 Layer Dip

Ingredients:

4 cups shredded iceberg lettuce
2 1/2 cups peeled and cubed butternut squash
2 cups cherry tomatoes, chopped
1 cup diced onions
1 cup canned black beans, heated (if desired)
4 ounces ground-beef-style soy crumbles, thawed if previously frozen
4 ounces red peppers, chopped
1/2 cup fat-free sour cream
1/4 cup shredded fat-free cheddar cheese
3 1/2 teaspoons taco seasoning mix, dry
Optional: salt, pepper, lime juice

Directions:

Combine half of the tomatoes with all the onions. Season to taste with salt, pepper and lime juice. Set aside.

Next, nuke squash in a covered microwave safe dish with 2 tablespoons of water for 6-7 minutes, until squash is tender enough to mash.

Using a fork or potato masher, mash squash to a pump. Mix in 1 1/2 teaspoons of the taco seasoning and set aside.

Heat soy crumbles per directions. Combine soy crumbes with the remaining tomatoes, and 2 teaspoons of taco seasoning.

In a large dish, layer ingredients in this order: butternut squash mixture, lettuce, tomato/onion mix, sour cream, black beans, meat mixture, shredded cheese, and red peppers.

Makes 8 servings.

Per serving (about 1 cup): 105 calories, 0.5g fat, 323mg sodium, 19g carbs, 4g fiber, 3g sugar, 7g protein.
