ReplyDeleteOne thing I like and keeps me going is to have Hyvee grind up their organic chicken breast(or whatever fresh kind you find). I think it tastes better than turkey breast (it gets kind of dry when cooked) and it hold and flavor and moisture of whatever you are cooking it with very well. Thats one of my tips!
If you are in the mood for brownies and have some carbs to spare, you can make black bean brownies. All you need is 1 can of black beans (15 ounces) and a box of brownie mix (low fat works well).
ReplyDeleteOpen the can of black beans and rinse well. With beans back in the can, add enough water to cover beans. Put in blender or food processor and puree. Add puree to brownie mix, and then bake according to package directions.
The black beans replace the eggs, water, and oil. To calculate the nutritional value, take the nutritional value for the dry mix only off of the box and add it to the nutritional value of the beans, and divide it by the number of pieces you cut up. A high fiber way to get your chocolate fix in!
and rather than adding the eggs, water, and oil, add a can of pureed black beans.
My wife and I are always trying to find a way to "jazz up" some of the not so jazzy foods that are required for a healthy diet. I recently made up a "topper". I call it "Avocado Topanad". It is essentially a very fresh tasting VERY low fat (healthy type of fat at that)condiment for sandwiches, salads, chicken burgers, and other meats and fishes. It is also Good all by itself. Here is the Recipe:
ReplyDelete4 Ripe Haas Avacodos (cubed)
2 Large Roma Tomatoes (diced)
1 half of a medium Red Onion (diced)
1 Jalapeno (seeded and VERY finely minced)
One entire bunch of Cilantro (rough chopped)
3 tsp of Lime Juice
Cracked Black pepper to taste
Salt substitute to taste
Mix all ingredients together in a mixing bowl. The avocados will start to break apart but that is ok. The lime juice is required as it stops the avocados from turning brown. Once everything is mixed together you can serve it immediately or better yet cover it up and let it set refrigerated over night. CAUTION: The dish will have some kick to it due to the Jalapeno. You can use as little or as much Jalapeno as you like. TIP: If you do not like Jalepenos you can substitute Cayenne pepper and it is just as good. Well I hope everyone likes this. It has become a staple in our home due to its versatility. If you try it, let me know what you think of it. Thanks!
